setting of default font

I was looking where i can set the default font.. but did not find the place in the UI.

I understand the formatting "steering structure" for fonts as follows:

1- default

2- themes and formatting - settings

3- automatic formatting - settings

the formatting is applied in order i a way the number representing the priorities - 1=low, 3=high.

But the start is undefined ;) - as i did not find where to set the defaults.

Is there a place?

if not, could it be added?
