Is there a way to click on a task and expand/collapse all the
subtasks?
I know I can collapse ALL, but I find myself expanding all subtasks
under a task, one by one
Any ideas?

Click on the task and then "expand entire outline."
Look in the Hotkeys section to see what hotkey does the "expand entire outline" part. For me it is F7 but I think I have moved those hotkeys around some from the defaults...

For me, ctrl+` expands all subtasks if the highlighted task is collapsed, otherwise it collapses all subtasks (View > Collapse/Expand > Collapse/Expand sub-tasks).
