Winter Inspiration

Is anyone else missing the ease of summer...throwing a piece of meat
on the grill, adding fresh veggies on the side and dinner is over in a
hurry?

I am needing some winter inspiration for healthy winter meals! What
are you eating these days? Bonus points if it goes in the crock
pot :)

I thought I would share one of our favorites. This one takes a bit in
the oven but is fairly easy to prepare and VERY tasty!!!! The
leftovers are even better!!!!

Roasted Chicken

2 tsp kosher salt
1 tsp garlic powder
3-4 pound whole chicken (for this I think it is worth the splurge on a
TJs chicken from Naturally Yours....it is so much tastier than what
you get in the grocery!!!)
3 T. butter
4 sprigs fresh thyme
3 sprigs fresh rosemary (I just buy the poultry seasoning pack from
the fresh herb section with rosemary, thyme and sage and use the whole
package)
1 yellow onion, quartered
12 oz. baby carrots - i use more
1 pound new potatoes (can also substitute with whole mushrooms...very
good!)
1 lemon, quartered
6 cloves garlic peeled but left whole - I LOVE garlic and put in tons
more :)
ground black pepper to taste.

Heat oven to 300 degrees.

Combine the salt and garlic powder, then rub the mixture over and
under the skin. set aside.

In 5 1/2 quarter or larger dutch oven over medium heat, melt the
butter. Add the thyme and rosemary. Heat for 30 seconds.

Add chicken breast side down for 4 minutes. Use tongs to carefully
turn chicken and brown on bottom for 6 minutes.

Arrange the onion, carrots, potatoes, lemon and garlic around the
chicken. Place lid on pan and put it in oven and roast for 1 hour and
15 minutes or until breast is 160 degrees.

Transfer chicken to platter. Use slotted spoon to transfer veggies to
serving bowl. Discard lemons and herb stems.

Place over medium heat and bring to a boil. Cook until reduced and
thickened...about 5 minutes. Adjust seasonings with salt and pepper.
Drizzle over chicken and veggies.


Enjoy!!
