2 tbsp. butter
1 c. finely chopped onion
1 lb. ground beef
2 tbsp. flour
1 tsp. salt
1/4 tsp. pepper
1-10oz. can sliced mushrooms, drained
1-10oz. can cream of chicken soup (or mushroom)
1/2 c. sour cream
1/4 c. grated medium cheddar cheese
Melt butter, add onions and saute slowly until onions are limp. Add
beef and fry until cooked. Drain and discard fat. Sprinkle flour,
salt and pepper over meat mixture and stir. Add mushrooms, cook,
uncovered for 10 mins. Add soup and continue to cook for another 10
mins. Stir in sour cream and cheese. Heat through. Can be served
immediately or put in a casserole, covered, and heated in oven.
