1 tablespoon olive oil
2 teaspoons hot curry powder
1 large (1 lb) baked Italian bread (pizza) shell
2 cups (6 to 8 oz) lightly packed shredded mozzarella cheese
1/3 cup (each) chopped fresh cilantro (coriander) and fresh basil leaves
1/4 pound smoked salmon or trout, cut into about 1/4"-wide
strips
1 cup (about 3 oz) enoki mushrooms, root ends trimmed
Preheat oven to 400 degrees F.
Combine olive oil and hot curry powder.
Place bread shell on a 12-by 15-inch baking sheet; spread curry
mixture over crust. Sprinkle mozzarella cheese, then cilantro and
basil leaves, evenly over crust. Top with salmon pieces and enoki
mushrooms.
Bake pizza in a 400 degree F oven until hot throughout and cheese
bubbles, about 12 minutes.
Cut into wedges and serve.
