On the posts page, what is the function of the Weight field? It's one
of the required fields and would be helpful to know what this field is
for.

The weight is used for ordering. If you edit any of the views, "admin/build/views", you can sort the dashboard entries by date modified, date created, or weight. You don't have to use the weight as a sort option, but it allows one to force an order on a set of statistics.
