There are some GUIs for mupen64plus i think. At least i have heard
about cutemupen. You can start it from command line though:

$ mupen64plus [options] /path/to/room

Options can be viewed with mupen64plus --help

The Current version has no interface, so you can either run it from the command line (as shown above) or, try this to make it so you just double click roms.

1. Right-Click on a ROM file (like .n64 or .z64) and select Open With
2. Clickk the "Use a Custom Command" option.
3. type "mupen64plus" (without the quotes) as your command.
4. Check "Use as Default" or whatever option is there. (depends on your setup)
5. Click OK

You'll need to do this for every type of n64 file you happen to have (.z64, .n64, etc) but from then on it should work to just double-click the ROMs.
