There are two possibilities:

1) If the price of all types labour is the same, you can create one
product "Labour [hour], and specify in the product description what
kinds of labour you provide.

2) If different kinds of labour are priced differently, you can
denominate you product in USD (this is the unit of measurement), and in
the product description, list a price for each individual kind of
labour. Like I did here:

(you may need to add me to your partners list to see my products)

If (or when) the individual prices change over time, you can create a
new product (marked with new date), having the new prices in its product
description. You may also send a message to your customers, so that they
know about this change.
