Contrary to popular belief, pork lard is not mainly saturated fats. It actually contains approx 50% monounsaturated fatty acids (the healthy type) vs about 40% saturated fats.
 
Also contrary to popular belief, saturated fats are not harmful but necessary for many body functions. The integrity of every cell wall in your body depends on saturated fats and cholesterol. Without adequate saturated fats, your cell walls weaken, making you more prone to viral attacks, cell mutations, etc.

we need cholesterol for bodily functions when we eat them in moderation.    but if we eat excessively, the extra cholesterol not used up will cause problems.  there are also 2 types of saturated fat.   HDL is good,  and only LDL (low density lipoproteins) are harmful
