On the default apps section of Windows 10 settings, scroll to the end
and choose Set Default By App. Scroll down to Thunderbird and make sure
it is set as default for all possible options.

I just did that and it actually indicates that in the header, but it still
keeps opening Outlook - which I don't want it to do.

What about doing it the other way around? Go to the default app settings

I fixed it by re-installing Thunderbird over the existing one.
