Cruising through my Tools - Options - General, I find that Google is NOT
LISTED as a default search engine. Why is that, and how can I add it as
default?

Because Bing is the default search engine.

I can see that Bing is the default. I wonder who made that decision,
since Google is so popular. In any case, that's for the info. I've
installed it.

Do you really have a search engine in Thunderbird?

There is one, and I use it. If you highlight anything within an email
and right-click, one of the options is to search Bing for it. When I
have to type in a tracking number (a linked one will go straight to the
preferred browser and preferred search engine), I find it convenient to
do a search on that number, and I too would prefer to search with Google.

For why, see https://bugzilla.mozilla.org/show_bug.cgi?id=731590#c12

~~~~~~~~~~~~~~~~~~~~~~~~~~~>% COPY %<~~~~~~~~~~~~~~~~~~~~~~~~~~~
The Thunderbird default list of search engines reflects the
agreements and authorizations we have with their respective
owners. We do not have such agreement or authorization from
Google.
This is a change that's primarily driven by business agreements
and we generally do not publicly discuss these details. We
realize it can influence the community, but as it is, we believe
that the default list of search providers will give great search
results.
This applies to the English (US) version of Thunderbird,
In my English (British) version of Thunderbird, Google is still the default.
As WaltS48 has already replied, you can install Google Search as
an add-on from
https://addons.mozilla.org/en-US/thunderbird/addon/google-search-for-thunderbi/
Then go to Tools >> Options >> General and make sure it is selected
as the default.
