Just noticed that I now have 3 Sent Folders. One actually has sent
messages in it and one is empty with another empty "Sent" sub folder.
How do I remove the redundant empty Sent folders? Thanks.

Select on that sent folder , right click on it and select Delete .

If it fails to work , close Thunderbird .
Goto Thunderbird profile folder
["http://kb.mozillazine.org/Profile_folder_-_Thunderbird"]
Backup your profile folder .
Open Mail folder . Open Local Folders .
Delete/move _empty_ Sent file , 'Sent.sbd' folder and all .msf files .
Start Thunderbird .

If Nir's advise doesn't work, in addition to doing as he mentions you may
have to pull up the panacea.dat file in the TB profile and search for the
word "sent". Figure out the file names associated with sent folders and
which one is the "real" sent folder and which ones are for the extra sent
folders. Then find those files and delete them or move them to another
folder, just in case you logic is wrong so you can move them back. Do all
of this with TB not running of course. Then start TB back up and keep your
fingers crossed, as this is a recurring problem that has afflicted me and
several others in the past. Once cured problem shouldn't come back. My
extra sent folders appeared when I upgraded from TB 1.5 to 2.x
