Easy enough to figure out how to mark a thread for watching, and that
info is in the online Menu Reference, but how to you remove the Watch flag?

Use the same menu item.
It turns "watch" on, and it turns "watch" off again.

W toggles Watch on/off.

Threaded sort, focus on thread pane, select any message in the thread,
hit W - the watched icon turns on for the first item in the thread. Hit
W again, the watched icon turns off.

The watched icon (eye) is seen in the column named 'thread' in the
'click to select columns to display' so you need to have that item
selected so there will be a place for the eye/watch icon.

You can also use the Message menu/ Watch thread function to toggle watch
on and off. In this case paradoxically, Watch also means Unwatch :-)

Thank you, gentlemen.

It would have been nice if they had mentioned the toggle effect in the
Menu Reference web page. :-(
