When a site such as
http://docs.info.apple.com/article.html?artnum=60920#faq1 has text
that says:

Does that mean the site's broken, or is there a setting on my computer
that needs to be set?

This is due to an error in the code. The person making the page should
have typed "—", not "&emdash;".

The site developer did not use the correct coding. It's not your computer

Indeed. Some older browsers (not the current releases of the Gecko-family
browsers) don't even recognise &mdash; but they do recognise the equivalent
&#8212; . It means the em dash character (U+2014), a long horizontal stroke,
about as wide as an uppercase M, hence its name.
