Change default upload folder

When uploading files (Email attachments etc), the default folder in the Open dialog is Desktop.
How can I set a different default folder?

That is where to save Downloads.

The question is about selecting a different folder for adding
attachments to emails, uploading screenshots to an image hosting site,
or other file uploading function.

I think that would be a function of the OS. Not sure since I just
navigate to where I want to get the file from.

Not sure about Firefox, I don't really know where to test this, but in
Thunderbird, the folder that pops-up for me when I want to attach a file
is the last folder used to attach a file...
