It looks like Office365 is going to force everyone to use OAuth2 by
October this year. I tried using the existing OAuth2 support in
SeaMonkey, and it doesn't seem to work; from what I'm seeing, on the
Thunderbird side it requires version 78 or later.

Anyone know if there are any planned updates in this area for SeaMonkey?

There is a thread on OAuth2 in the replacement Newsgroup
alt.comp.software.seamonkey (not on this server, of course) and the most
recent posting was less than 24 hours ago.
Summarising:
- it works
- "Deactivate NoScript and uBlock temporarily and allow password saving"
- allow cookies

You'll have to look there if that is not enough.

One year ago, the company I work for moved to Office365 and I immediately lost access to my emails over POP3.

After finding that OAuth2 was required, I tested the Thunderbird email client and it worked, but then I knew it was necessary to use IMAP instead of POP3.

So I just converted my account in Seamonkey to IMAP, selected OAuth2 for authentication and since then it has been working perfectly.

Working now for me also; next SeaMonkey release will have this fix:
