Hi Luca,
Sorry for the delayed reaponse. Answering this question here in case you still have the query and for future consumers.
It does support Apple M1 chips. You can find the binary for it in
https://github.com/konveyor/move2kube/releases/download/v0.3.2/move2kube-v0.3.2-darwin-arm64.zip
