When to use mountebank. after deploying the application ?

can it be configured along with junit?

You can configure mountebank to start before your application starts. eg., running mountebank docker container and creating imposters using .json files. Check mountebank docs for details -  mountebank - stubs (mbtest.org)

This way mountebank is available to your application and junit test before testing.
