It's probably me not having enough coffee yet...or just being slow.

But, I apparently don't understand the implications of the settings under Motion detection. (I've done some searching and looking in the wiki, etc. but, I'm missing it...)

I don't get consistent picture with the email. Sometimes I get none, sometimes 1, sometimes 2. Sometimes the 2nd pic shows motion, sometimes not.

Does "Minimum Motion Frames" mean after the set number of motion frames, it take the "Captured Before" number from the "Minimum Motion Frames", then captures the "Captured After" number of frames?
(And, yes, I read the popup tooltips...multiple times.)

Confused...

When setting up motion detection, the “Show Frame Changes” will help tremendously.  If you turn that on, it will place a red box around the detected motion and the amount of motion detected in the upper right-hand corner of the screen.  The amount of motion detected in the upper right-hand corner and the size of the red box are directly related and can help you in setting your desired “Frame Change Threshold” (this can also be done mathematically, but I find the visual method much easier).  You will also be able to see how the “Capture Before” works, because you will have that many frames saved before the red box will start appearing concerning the same motion “event” (personally, I keep mine set at 1).  I use still images and don’t save video files (I keep Video Streaming turned off), so all of what I said will apply to the saved still images.

Yes it's a tricky one to fine tune.  I think a lot of it has to do with the performance of you cameras, network, motioneye server etc.
As i understand things, Minimum Motion Frames says that at least this number of frames must change to trigger a motion event. Setting a higher number might make the detection less sensitive.
If you sent higher number of frames to capture before & after a motion event then i think there will be more frames in the buffer that the email sub-system can include in your email, based on the number of images you choose to include.
Are you using motioneye completely stand alone or do you also run a home automation hub like Home Assistant?
Cheers
