Hi there. I am going to try out motioneyeos on a pi 3b later today, and was wondering if the PS3 eye camera would work with this or if I am out of luck. If it doesn't, would an old phone work over USB to it? Just brainstorming.

No, motioneyeos doesn't support the ps3 camera. You might be able to install motioneye on RaspberryPi OS Buster, or Bullseye, and get it working there...

As to using a phone USB camera, I don't think it would work in either motioneye or motioneyeos as phones usually do not share cameras across usb, but there are apps that can share it across wifi, and you can set up motioneyeos s an access point, and you can do similar in RaspberryPiOS with motioneye installed.
