At least for the Debian package, your installation (via apt-get) will
cause MongoDB to be set up as a service. This is a) formally best
practice on Ubuntu and b) neater since updating, cleaning up, etc. is
accurately handled by Aptitude.

Packages also provide an easier way to manage your mongodb installation. If you ever had to update/remove your mongodb installation, RPM (centos+redhat) and DEB(ubuntu) make it quite simple using the command line.

We use packages to install mongodb (including different versions) on centos and have been quite happy with it. We have yet to hit a bug with installation using the packages.
