Is there a preferred OS for running MongoDB? What OS is most testing
done on? What OS are most major deployments using.

I'd say from the stuff posted on the group that most people are using
linux (ubuntu/debian/fedora/centos).

Linux - the distribution basically does not matter much.
Use ext4 or XFS as filesystem, use 64-bit hardware, get enough RAM
and a fast IO system for "high-end" systems.

On that note, ext4 is nice because it allows the 2GB files mongo uses
to be allocated nearly instantly.
