Update 2: I've started to think that these companies created accounts on all biggest email providers like Google and Microsoft with the same email addresses. I have tested that by creating [email protected] as a brand account on Google, and all recipients using Gmail, started seeing my sender picture. There may be a similar story with Microsoft Mail/Outlook.
The use of "favicons" in a mail client is totally up to your email client. I know in Mozilla Thunderbird, at least five years ago, there was an add-on to do what you want to do; the add-on was basically set up to "hard-code" an image to use for a particular email address; IE: If the from: address was [email protected] the add-in would use a GMail icon in the inbox list.
Here these are not icons but only generated "helpful" visual aids.Microsoft has decided to add these to its Mail app in 2017 for visuallyindicating the source of the email, a feature that existed already inits products on Android.

I have the .icns file but the old "get info" trick where you just paste the icon over the existing one doesn't work. I've also tried "Show Package Contents" on the Mail.app and replacing the ApplicationIcon.icns from the Finder and Terminal under sudo. No luck.
There is an easier way, download an app called "Liteicon" you can get it from softonic its reliable I used it. After you download it open it up go to applications put the icon you want replacing the mail icon then click apply changes and restart your laptop then you will see it changed.
When the upgrade occurs, the Mail program will have its icon changed but the alias will not. You can then put the alias into the Dock or anywhere you would want it. The OS even allows you to put it in the 'programs' section of the Dock where it seems to function exactly as a program (ie a second icon does not appear when you run the program through its alias).
I discovered this because I happened to have made a mail alias under Josemite, and saw that it retained its custom icon (through the upgrade). I tried doing the same thing after the upgrade to El Capitan but discovered that the new OS imposes SIP on aliases too, so if you try to change the icon after upgrading it will, sadly, revert to the blue standard stamp.
I need to remove the mail icon from all taskbars via GPO (all Win10 version). I do set an xml taskbar as part of the SOE task sequence but the mail icon seems to stick since v1703. I am wondering what others have done? If I use the method from Johan, I assume this will overwrite everyone's pre-existing taskbars they already have set? Is it best to just enforce a taskbar and go down that path?
Since I've had this Windows 10 computer, I never see the "Unread Mail" icon in my task bar. If I step away from the computer, the only way I know that I have mail is to switch from whatever I am doing, which is annoying. I got around it by using the Unread Badge add-on, but it no longer works with Thunderbird 78.2.2.
