"Texture - A hydrocolloid recipe collection" available for download

I just wanted to let you know that the collection of hydrocolloid
recipes has been updated and is now available for free download from:

http://khymos.org/recipe-collection.php

What's new?

- several new recipes (now counting more than 220 in total) for 14 hydrocolloids

- in each section hydrocolloids are sorted according to the amount of
hydrocolloid used

-tables for comparison of hydrocolloid properties, hydrocolloid
densities and synergies

-all recipes have been indexed according both to the
texture/appearance of the resulting dish and according to the
hydrocolloid used

On the same note ....see the attachment, I do not have a gastrovac but I have been sous viding many fruit &veggie to create what Adria calls Gran Crus.
Apple, simple syrup + pine tree essential oil ("Pine Apple"")
Pineapple & Bergamot essential oil +simple syrup
H2O melon + Gin & splash of simple syrup
Cantaloupe + Eucalyptus +simple syrup
Peach w essential Almond oil works very well....
Cucumber are great & refreshing like fennel, Tomatoes, Jicama, radishes!!!!!
I anybody doing something similar & is ready to share secrets??
