Why not use the pedometer/accelerometer ? If the user is wearing the device....

You might use  the Sound extension  http://appinventor.mit.edu/extensions/   for capturing a noise.   Your user must either whistle or grunt after each pushup probably.  You will have to experiment.

Cannot wear the device?  If the user does not have his/her Android in his/her pocket or hands, how can you use the pedometer and accelerometer etc. (the pedometer is a special case of the accelerometer); both use the hardware in the device to elicit a response.

You can literally wear the device on your arm using a smart phone fore arm/upper arm strap - like a watch strap, little bit bigger and intended for people jogging etc. Check out eBay for example.

Regarding jumping jacks,
maybe there is a distinctive wave form
that can be sensed by gravitational/inertial/centrifugal force / time
on a wrist-mounted phone?

That's the accelerometer sensor.

I would start at 

(I haven't used this much.)
