I've tried to link my Android phone and it fails to link when using the Edge browser. Switching to Firefox, it linked immediately.
I'm quite happy to keep using Firefox but would be interested to know why Edge doesn't work.

Edge is not an App Inventor 2 supported browser.  Part of the reason is how the Microsoft browser uses html5.    Supported browsers include Chrome, Firefox, Safari and a few less known browsers.  The Microsoft browsers appear to work with AI2 for some activities and then suddenly they fail, because they are not totally compatible.

You are not limited to Firefox John.

Regards,
Steve.

...because Edge is IE in disguise?

As with a lot of Microsoft things, good or bad, it's built to their own standards, so if you want your in-browser app to run, there is extra work to do - but there really is no point in doing that given that Chrome, FireFox and Safari are all excellent browsers anyway.
