As part of the PLTW App Creators program, I have students pair program.  Periodically, I will have students who are absent.  If a student is pair programming, how do they continue the work if they are using one student account? We've shared files on Google Docs, but I wanted to know is there any easier solution to this problem?

Have you tried using the server at code.appinventor.mit.edu and passing
the four-word session code for a project around the team?

There is no simultaneous updating allowed on any AI2 server, though.
It's all one at a time, look over a shoulder using a screen scraper like team viewer.

If you have set up shared storage for .aia exports, you have the makings of a nice
backup and version control system for your students' projects.

Even having your students bounce .aia files back and forth through email works,
if they agree on who is running with the ball.

Importing and exporting project files is a small price to pay compared
to  the heartache of lost work.
