How to adjust labels on sidebar?

How can I turn the labels on the side to either an optional drop-down menu, or minimize so that only a certain # can be viewed? Is this possible?

You can drag and drop labels into the "More" dropdown to hide them. You can also go to more > manage labels to change the show/hide settings for each label.
