MIDI2LR shows the channel number, CC number and value when a MIDI Controller encoder or slider or button is modified.

But... How could we also see all the values that MIDI2LR sends to the MIDI Controller and potentially their associated Lightroom command ?

Use the show status and activity option in the plugin. You can do the same thing for profile changes.
