I'm looking at purchasing an electric oven. Each deck requires a 30 Amp service, and since I'm looking at 2 or three decks, each with a three pan capacity, I'm going to have to increase my amp service by another 200 amps.

My other option would seem to be buying a phase converter. I'm not fond of them. I have one for my sheeter, a rotary phase converter, and it's not quiet, but presuming I had to go that route I could always put the phase converter outside of my building in an insulated box so that I wouldn't have to listen to it as I bake.

one is a salva k5 which is 5 grid and 6kw the other is a unox xl505 and xb603 5 grid but also has a prover which uses 9kw combined, the prover is a seperate unit which plugs in on 13 amp plug but is controlled by the oven control unit
