when I invoke the style.
This is completely separated from the Insert > Caption feature in
Word, or so I believe.
I know this can be done, because I have an existing template with these
styles in it and I am pulling my hair trying to figure out how they
set this up.
The thing is, I need to modify these styles so it inserts
Figure 1-1
Table 1-1
when I invoke the style.
Any help is greatly appreciated.

Suzanne's approach is probably the preferred one. But if you really do want the style itself to generate the number, then here's
how.
You have two choices, depending on where you want the "chapter" number to come from.
The first method would be to create a style called Figure and one called Table, and give them automatic numbering. Follow much the
same steps as described at:

When you get to the Customize Outline Numbered List dialog, delete everything in the Number Format box. If you want your Figures to
be Figure 2.1, Figure 2.2, Figure 2.3, then type "Figure 2." Then use the Number Style box to add the number format you need. That
will generate the last number.
The significant disadvantage of that method is that you have to hard-code the chapter number. If you have many "chapters" in one
document, this method basically won't work.
The second method is to make your Figure and Table styles part of the whole Heading outline numbering scheme, as described in the
link above. I once used Heading 8 for Figure and Heading 9 for Table. Or, you could Link Levels 8 and 9 to custom styles called
Figure and Table. Then, if you use Heading 1 to number the Chapter, you can pick up the Chapter number in the numbering for the
Figure and Table styles. Just make sure you set the Figure and Table levels to re-start after Level 1.
The disadvantage with this second method is that it's conceptually shaky, and the purists would cringe. But it does work.

So I adapted these fields for my own use and got the chapter numbers
to work.
That said, I am going to review Shauna's article and methodology.
I've learned a lot in the last few days, and while Word will never win
my heart for creating long documents (FrameMaker wins hands down), I
am least learning to live with it.
