Word lets me configure what to start on & the general
style, but not the pattern way down the line after Z. I
can start over with a new outline style, but I was
wondering if there was another way.

The numbering Word uses is correct in outline documentation.
What the user wants is the way Excel "numbers" its columns,
and is not really standard for classical document work.
In a nutshell "Word can't do this". There is a way, but it's
tricky, complicated to set up and can slow the document down
tremendously when it updates. It uses SEQ and SET fields,
not autonumbering. You'll find the very basics on my
website, and a bit more on what's going on with it in the
first or second of these articles.
