I tried doing File/Page Setup/Landscape. That rotated the "paper" but
did not rotate the image, which now dangles off the page. I cannot find
any option, either in Word or in the HP Scanner software, to rotate the
image on the page.
How do I do this?
I have another situation where I am putting two photos kitty-corner on a
page. In this case I would like the captions to be beside the photos,
in the otherwise unused blank space, rather than below (or above) them:

If I understand you correctly you have two problems:
- you want to rotate a picture over 90 degrees
- you want to rotate a caption over the same amount
To rotate the picture you'll have to use specific software like Paint
Shop Pro of Photoshop.
(You could, however rotate the picture yourself before scanning)
The caption may be placed in a textbox, which lets you rotate the text
90 degrees clockwise or counter clockwise.

When you pasted the picture, if it was pasted 'inline' with text (black sizing
handles) Word would have resized it fit within the text boundaries (margins)
of the page.
When you rotated the page from portrait to landscape it won't resize the
picture but if you right click, choose Format=>Picture=>Size and 'reset'
it should put it back to its original dimensions (or you can choose another size).
(the 'reset picture' button on the Picture Toolbar does the same thing).
For the 2nd scenario with the kitty-corner pictures you can select the caption
and (from the Forms toolbar) apply a frame to it or as Richard mentioned put
it in a text box. The text box can be 'grouped' with the graphic if you're floating
the graphic (i.e.making it not 'inline' with text) so that it becomes a single entity
to drag about.

I guess I didn't make myself clear. The original picture is an 8x10 print.
Therefore the only way that I can put it in the scanner is turned on its side.
When I scan it into Word the picture appears on the page on its side, which is
in fact the way I want it, filling most of the 8.5x11 page. However I want to
put a caption on the picture. I want the caption to appear "below" the picture,
that is against the outer margin of the page and oriented at the same 90 degree
angle as the picture. However Word is not aware that the content of the image
is rotated in that way and only provides me the option of placing the caption
"below" or "above" the picture, which would be from the rotated perspective
either to the right or the left of the picture, and with the text at 90 degrees
to the normal viewing angle of the picture.
How can I put a caption on this picture?
