Since the existing graphics are already captioned, why not simply turn off
auto-captioning for pictures until you're done replacing the graphics?

Insert - Reference - Caption - AutoCaption. Remove the check(s)
corresponding to pictures.

Press Alt+F9 to toggle the display of field codes. If something is an
automatic number (inserted using the autocaption feature) it will display as
{ seq figure } or something like that.

It's also a good idea to tell Word to display fields as shaded so that you
can tell at a glance that it's something funky rather than normal text. In
Word 2003, choose Tools - Options - View, and set Field shading: to When
selected or Always. Some prefer "When selected" since it's not as visually
annoying. But, I generally prefer full information so I can tell at a glance
where the fields are lurking.

(For lurkers... in Word 2007, field shading settings are found in Office
button - Word Options - Advanced tab - Show document content.)
