How can I customize the Styles menu for a specific template, and not let it
change the presented styles?

Which version of Word?

Here are ideas on steps to reach your goal. There may be other ways that
will work better.

Create a custom toolbar with a menu. Put the styles you want on that menu.
Replace the styles drop-down with a copy of your menu. Make sure that your
customizations are stored in your template rather than in normal.dot.
