Where did they move the 'spacing between columns' setting
to in Office XP? It was on the Column tab for table
properties in Office 97, but it's not there in XP.

There is no longer a "Space between columns" setting per se in the Table
Properties dialog (though you can still access it if you restore the old
Table | Cell Height and Width dialog*). You can now choose "cell margins"
individually for specific cells or for the entire table.

If you click Options... on the Table tab, you'll see that the default is the
same as it was in Word 97 and earlier: 0" top and bottom and 0.08" left and
right (for a total of 0.15" between columns). You can change this for the
entire table in this dialog.

To change the margins for a specific cell or selected cells, click
Options... on the Cell tab, clear the check box for "Same as the whole
table," and then set the desired margins.

These changes were made (beginning in Word 2000) to be consistent with the
"cell padding" used in HTML tables.
