That's not possible; Word's crop tool is strictly rectangular.

If you're a glutton for punishment, there's a way to get a similar effect.
Choose the freehand drawing tool and draw the shape you want, ending the
curve at the starting point so it forms a closed figure. Right-click the
curve and choose Format AutoShape. In the dialog, click the Fill dropdown
and choose Fill Effects. In the next dialog, choose the Picture tab and
select the picture you want to "crop". If the shape isn't quite right,
right-click the curve and choose Edit Points -- this is the really tedious
part -- and move/add/delete points and adjust their curvatures to your
requirements.

In all, you'd be much better served by getting a graphics editor that really
can do a freehand crop with a dedicated tool.

Select the image, select the Crop tool on the Picture toolbar or Picture
Design Tools tab, and push on one side or another of the picture.
