How to use checkboxes in an unprotected form?

I have created a form with checkboxes and form fields. I would like to
unprotect the document but still have the checkboxes functional. Is this
possible.

Not with check box form fields, no. But there are other types of check boxes
that can be used in unprotected documents.

There are a number of ways to create and use clickable checkboxes in
documents / templates. Some require protected or locked forms, others do
not. Take a look at the Checkbox template available at
http://www.addbalance.com/word/download.htm#CheckboxAddIn for an exploration
of these.

Not without extensive vba and using controls from the controls toolbox.
However, you may want to look into the AutoTextList field.
