I have a PDF doc of about 40 pages that I need to insert into Word. The issue I am having is that when I go to Insert --> Object select pdf and the document, it only brings in the first page and not all the pages.
How would I bring in all 40 pages.

It seems you have to do 40 separate Inserts.

Objects cannot span pages in Word therefore you only see the first page - and even that is only possible if you have Acrobat/Reader from version 7 onwards. You would need to create each page of the PDF as a separate document or image.

If you have Acrobat, you can use File - Save as to save the PDF as a JPEG. It will create a folder with each page saved as an individual JPEG. They'll be named Page1.jpg, Page2.jpg, etc. Then you can insert them.
