It takes two presses of the quote key (for both ' and ") for the quote marks
to appear in my Word 2002, and when it does it appears twice so I have to
press the Delete key! Can anyone tell me why this is happening and how to
stop it, please!?

It could be that you have an international keyboard layout enabled (Windows
| Control Panel | Keyboard).
