How do I use Form Field Options in a Word document?

I have a lengthy word document that needs to be turned into a form. In some
sections I can can enter a form field with test in the form field for the
user to fill in. In other normal paragraph sections that option is greyed
out. Does anyone know how I can get them active or turn my document into a
form?

Syd, the whole idea of an online or fill-in form is to restrict the user
from being able to change anything but the form field areas themselves.
