I had created a Word document in Word 2000. Now, after upgrading to Office
2003, all my little square bullet items show up as a +. Is there a way to
replace all the bullet symbols + back to the little squares all in one shot?

The best advice I can give is: change the way you're applying bullets
(use styles only for that; see the primers, esp. Shauna Kelly's below).
Setup a numbered style for your bullets now, and then use find/replace
to search for the bullets (formatting) and replace with the style.
