In Word 2003, it retained the font you were in, now in Word 2007 it puts it
automatically as Headings Font, which looks normal on the screen and prints
out wacky!
Can someone please help???

Easiest way (since that style usually is hidden)...
Press Ctrl+Alt+Shift+S
Click the Manage Styles button near the bottom of the Style pane.
In Manage Styles' Edit tab, find Envelope Address, then click Modify.
Etc.

I wonder why the 'default font' button does not work in the envelope window.
Done that way, the font change does not take.
