when I put in a header of footer it ends up on every page of the document.
How do I limit a header to particular pages within a document ie page 5
through 10 of a 15 page document?

By inserting Section Breaks (Insert, Breaks), going into the Headers and/or
Footers and turning off the "Same as Previous" feature.

You can use section breaks, but if all you are trying to do is alter the
headers/footers for particular pages, you can make conditional headers the
same way you can make conditional page numbers using the IF field. Take a
look at http://www.mvps.org/word/FAQs/Numbering/PageNumbering.htm.
