I normally happily use Track Changes and simply delete words I don't
want form the text. However, sometimes, the programme throws a tantrum
part way through and goes to strikethrough, then stays like this
throughout. What causes this and how can I stick with my nice clean
deletions?

What version of Word? If it's a recent version (Word 2002 or later), what
view are you in (Final or Final Showing Markup)? What format is selected for
deletions in Tools | Options | Track Changes? Ordinarily the whole idea of
Track Changes is that insertions and deletions are marked in a specific way,
and deletion would ordinarily not be actually deleted (though they might be
formatted as Hidden) until you accept all the changes.

If using Word 2007 on the Review tab click Balloons make sure "Show
Revisions in Balloons" is selected and not "Show All Revisions Inline".

I'm using Word2002 with Tools/Options/Track changes with Balloons
ticked - normally it shows my changes in the balloons on the side, but
sometimes, part way through a manuscript, it throws a tantrum and I
lose the balloons and get all the deletions marked in the text
