Is there a way I can set a folder to always open up in thumbnail view
instead of filmstrip?
1. Open "Folder Options", then the "View" tab.
2. Scroll down and check "Remember each folder's view settings".
3. Click the "Reset All Folders" button.
4. Close Explorer, then restart it and see if it works properly now.

If you configured Windows Explorer to not hide protected system files, one
of those would be the desktop.ini file inside the folder that contains
directives on the behaviors of that folder. If you delete a bunch of files
and happen to also select and delete the desktop.ini folder (because it
isn't hidden anymore) then you also deletes the settings contained in that
desktop.ini file for that folder.
