There is no universal answer to this question.
But if you configure XPe logs, etc correctly no more few MB should be used by RAM EWF overlay.
Use ewfmgr to see memory usage when you boot. And during the few hours of work.
Your memory usage should not increase if you have configured your XPe "correctly".

I refer to prevent XPe (drivers, services, programs, etc) from writing to protected partitions.
You should try to disable all writes you detect and that you can find out how to do that.
Follow MS tip pointed by Konstantin.
Reduce number of services if you can (this will reduce some log writes).
And if ewf usage is rising make sure to find out what is causing this to happen.
