I have a laptop that crashed that was running windows XP. I pulled out
the hard drive and placed it into once of those external usb adapter
drives to try and recover my data. But the problem is that I am not
able to access the folders with the data. I get an access denied
error. How can I bypass this?

Thank you in advance for any help!

These permissions are recognized by windows. You may be able to bypass
them if you use a live (linux) CD. A couple you may want to check out are
Knoppix and/or Ultimate Boot CD.
