Upgrading from 2000 to 2003

Im going to upgrade from 2k to 2k3. I plan to upgrade the 2000 domain to
2003, using the adprep tool on one of the 2k servers, then add 2 new 2003
server servers to the domain and the demote the 2k servers... is it that
simple?...

You've got the basic process listed.

*Use the 2003 adprep (/forestprep and /domainprep) to prepare the domain for
2003 domain controllers.
*Promote the 2003 server(s) to domain controlers.
*Transfer the FSMO roles to the new servers
*Demote the 2000 servers
