What are TXT records relative to DNS? I saw for the first time TXT records
in a DNS table and had no clue what they were all about.

I agree, SPF records are one type of data that can be entered into a TXT
record. DomainKeys is another. SPF and DomainKeys take advantage of TXT
records.
I would like to add to your post for the original poster, you can enter
other type of data as well, but it only really matters if the querying
application is designed to look for that type of data in a TXT record. SPF
data is identified by their prefix data such as ""v=spf1" or "spf2.0", which
anti-spam SPF-aware apps will query and will look for that type of data.
Besides SPF, here are other examples. Some I think are useless, like the
first link, but the second link shows how Apple's Rendezvous protocol uses
TXT records.

You would not generally need SPF or DKIM records, no. TXT records may
be used for something else, although I don't believe anything in Windows
or AD in general relies upon them.

I actually do use TXT records internally a little, although for silly
reasons, which is why I included the "for something else"
